Ingredients
- 1 large scoop of MCT Oil or grass-fed butter
- 1 Onion, diced
- 1 Star Anise
- 1 tsp of root Ginger, grated
- 2 Spice Capsules
- 2 large of scoops of Collagen
- 100g of Carrots, grated
- 1/2 Cinnamon stick
- 600ml of Bone Broth or Coconut Milk
- Toasted Pumpkin Seeds and chopped Fresh Mint to serve
Method
Step 1
Heat oil or butter in a large pan over a medium heat, and pop in your star anise and ginger
Step 2
Add your carrots, contents of your Spice capsules, cinnamon and stock. Simmer for 15-20 minutes.
Step 3
Remove your star anise and cinnamon stick and blend.
Step 4
Add your collagen and stir until dissolved.
Step 5
Serve with a sprinkling of pumpkin seeds and mint.
