Packed with immunity boosting ingredients, amino acid and MCT magic, this soup makes for the perfect lunch or starter.

Ingredients

  • 1 large scoop of MCT Oil or grass-fed butter
  • 1 Onion, diced
  • 1 Star Anise
  • 1 tsp of root Ginger, grated
  • 2 Spice Capsules
  • 2 large of scoops of Collagen
  • 100g of Carrots, grated
  • 1/2 Cinnamon stick
  • 600ml of Bone Broth or Coconut Milk
  • Toasted Pumpkin Seeds and chopped Fresh Mint to serve

Method

Step 1

Heat oil or butter in a large pan over a medium heat, and pop in your star anise and ginger

Step 2

Add your carrots, contents of your Spice capsules, cinnamon and stock. Simmer for 15-20 minutes.

Step 3

Remove your star anise and cinnamon stick and blend.

Step 4

Add your collagen and stir until dissolved.

Step 5

Serve with a sprinkling of pumpkin seeds and mint.
