Get on your shopping list or raid your cupboard
- 250g Cottage Cheese
- 90g of Almond Flour
- 1 large scoop of Vanilla Protein Powder
- 3 Eggs
- 2 1/2 tsp of Baking Powder
- 1 tbsp of Coconut or MCT Oil
- Knob of Butter
- Suggested toppings: Greek Yoghurt and Berries

Method
- In a blender, whizz all your ingredients together
- Melt some of your butter and oil (coconut or MCT) in a pan, over a medium heat
- Pour a small amount of your batter into the pan (you can cook 2 pancakes at once if your pan is big enough). Be careful not to pour too much mixture because it will spread slightly and you want the pancakes to be thick and fluffy.
- Cook on both sides for 2 minutes - flip carefully
- Stack your pancakes and serve with Greek yoghurt, berries and a drizzle of maple syrup if you want them a little sweeter
