Green Tea Chicken Broth

Rich in collagen and L-Theanine, this soup is a nutrient dense and calming recipe to add to your repertoire.


Step 1

Pop your chicken in a large pan with the leeks, carrots, onion, celery and ginger.

Step 2

Add thyme, peppercorns and then fill the pan with enough cold water to cover the chicken.

Step 3

Bring the boil and simmer for 1 1/2 hours. (You can continue to cook for an enriched broth if you wish and have time).

Step 4

Remove the chicken from the pan and return the broth to the heat. Add the stock cube.

Step 5

Shred the meat from the chicken and add to the broth.

Step 6

Add your green tea, collagen, peas and spring onions. Cook for a further 3-4 minutes and then add the juice of a lemon and season well.

Step 7

Serve with a sprinkling of fresh parsley.


  • 1 small organic, free range Chicken
  • 3 large Leeks, trimmed and roughly chopped
  • 4 Carrots, peeled and chopped
  • 1 Onion, diced
  • 3 Celery sticks, chopped
  • 3cm fresh Ginger root, peeled and sliced
  • 3 sprigs of fresh Thyme
  • 1 tsp of Peppercorns
  • 2 Bay leaves
  • 1 Chicken Stock Cube
  • 2 large scoops of Collagen
  • 300ml of strong Green Tea, tea leaves removed.
  • 100g of frozen Petits Pois
  • 2 Spring Onions, finely chopped
  • Juice of a Lemon
  • Salt and Pepper
  • 2 tbsp of Parsley, chopped, to serve
