  • 145g Almond Flour

  • 1/2 tsp of Baking Powder
  • 1/4 tsp of Celtic Sea Salt
  • 2 small scoops of Collagen
  • 60g of Grass Fed Butter
  • 1 large Egg (organic and free range)
  • 2 tbsp of MCT Oil
  • 20-30 drops of Stevia
  • 180g of unsweetened dried fruit mix (choose low-carb options like unsweetened cranberries and a few raisins for taste)
  • 3 Spice capsules - decanted
  • ½ tsp ground Cinnamon
  • ½ tsp ground Nutmeg
  • ½ tsp ground Ginger
  • Zest and juice of 1 Lemon
  • 120g of chopped Walnuts or Pecans

Method

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin or pie tin.
  2. In a medium bowl, mix together the almond flour, coconut flour, baking powder, salt, and 1 tbsp of collagen powder.
  3. In another bowl, whisk the melted butter, egg, MCT oil, and 10-15 drops of stevia until smooth. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  4. Press small portions of the dough into each tin cavity to form a thin crust along the bottom and sides.
  5. In a small saucepan over medium heat, combine the chopped dried fruits, Spice, MCT oil, cinnamon, nutmeg, ginger, lemon zest, and juice.
  6. Stir well and add a small splash of water (about 2-3 tbsp) if needed.
  7. Let the mixture simmer for 5-8 minutes until it becomes thick and fragrant. Remove from heat, mix in 1 tbsp of collagen powder, and add 10-15 drops of stevia to taste. Let it cool completely.
  8. Add a spoonful of the cooled filling into each crust, filling it up to the top.
  9. Optionally, use extra dough to form a small lattice or “lid” on top of each pie.
  10. Bake in the preheated oven for 12-15 minutes or until the crust is golden and firm.
  11. Let the pies cool in the tin for about 10 minutes before gently removing them.
