Get on your shopping list or raid your cupboard

  • 360g of walnuts (or any nuts of your choice)
  • 12 Medjool dates
  • 120g of peanut butter
  • 2 tbsp of cacao powder
  • 1 scoop of WillPowders Milk Chocolate Protein Powder
  • 1-2 tablespoons water (if needed)
  • 90g dark chocolate
  • 1 tbsp of MCT Oil
  • A sprinkle of Celtic sea salt

Method

  1. Take the stones out of your dates and pop them in a bowl of boiling water to soften.
  2. Add the nuts, peanut butter, cacao, protein powder and dates to a blender and whizz.
  3. If your mixture is a little powdery, add a little of the date water, a tsp at a time, and whizz again. You're aiming for a fudgy, sticky consistency
  4. Line a glass dish or baking/ brownie tin and decant your mixture - press the mixture into your dish so it is compact.
  5. Pop into the fridge to help it firm up whilst you melt your chocolate.
  6. In a bain-marie, melt your chocolate. Add 1 tbsp of MCT Oil for a smooth and silky melt.
  7. Let your melted chocolate cool a little and pour over your brownie mixture.
  8. Sprinkle chopped nuts or dried fruit like cranberries or cherries over the top of the melted chocolate
  9. Sprinkle a little Celtic sea salt to bring out the flavour of the chocolate
  10. Pop your no bake brownies in the fridge until the chocolate had fully set
  11. Slice, serve and enjoy
