
No Bake Protein Brownies

Get on your shopping list or raid your cupboard
- 360g of walnuts (or any nuts of your choice)
- 12 Medjool dates
- 120g of peanut butter
- 2 tbsp of cacao powder
- 1 scoop of WillPowders Milk Chocolate Protein Powder
- 1-2 tablespoons water (if needed)
- 90g dark chocolate
- 1 tbsp of MCT Oil
- A sprinkle of Celtic sea salt

Method
- Take the stones out of your dates and pop them in a bowl of boiling water to soften.
- Add the nuts, peanut butter, cacao, protein powder and dates to a blender and whizz.
- If your mixture is a little powdery, add a little of the date water, a tsp at a time, and whizz again. You're aiming for a fudgy, sticky consistency
- Line a glass dish or baking/ brownie tin and decant your mixture - press the mixture into your dish so it is compact.
- Pop into the fridge to help it firm up whilst you melt your chocolate.
- In a bain-marie, melt your chocolate. Add 1 tbsp of MCT Oil for a smooth and silky melt.
- Let your melted chocolate cool a little and pour over your brownie mixture.
- Sprinkle chopped nuts or dried fruit like cranberries or cherries over the top of the melted chocolate
- Sprinkle a little Celtic sea salt to bring out the flavour of the chocolate
- Pop your no bake brownies in the fridge until the chocolate had fully set
- Slice, serve and enjoy
