Soup season is definitely here and this is the easiest and speediest one you can rustle up.

Method

Step 1:

Chop the peppers and add to the airfryer with all other ingredients except the cream stock and basil. Cook at 200 for 20 minutes

Step 2:

Pop your roasted veg in a pan and add in the stock, cream and basil. 

Step 3:

Season and enjoy

Ingredients

  • 500g of cherry tomatoes 
  • 3 red peppers 
  • 1 x red onion 
  • 1 tbsp olive oil 
  • 3 garlic cloves 
  • 1 tsp oregano & thyme 
  • Salt and pepper 
  • 250ml of stock or homemade bone broth
  • 150ml of double cream
  • Handful of fresh basil
