
Protein Pancakes with Greek Yogurt

Get on your shopping list or raid your cupboard
- 1 Banana
- 1 Egg
- 20g of Almond Flour
- 1 large scoop of Vanilla Protein Powder
- 1 large scoop of Collagen
- 1 1/2 tsp of Baking Powder (if you want thick American style)
- A knob of Butter
- 1 tbsp of full fat Greek Yoghurt
- A handful of Blueberries
- A drizzle of Honey

Method
- Pop your banana, almond flour, protein powder, collagen, baking powder (if using) and egg into an electric blender and whizz for a smooth consistency.
- Heat a frying pan until it's smoking and melt a knob of butter.
- Pour a ladle amount for large pancakes, or a tbsp of batter for bitesize pancakes into your pan, flipping your pancake after a minute or so. Repeat until all your batter is used. Drizzle with yoghurt, honey and a sprinkling of blueberries.
