Another scrummy version of our protein pancakes with added collagen from WillPowderer, Nic Conno. Topped with good fat that will keep you satiated, crush those cravings and provide a double dose of those all important amino acids. Nic makes bitesize pancakes for those on the go snacks!

  • 1 Banana
  • 1 Egg
  • 20g of Almond Flour
  • 1 large scoop of Vanilla Protein Powder
  • 1 large scoop of Collagen
  • 1 1/2 tsp of Baking Powder (if you want thick American style)
  • A knob of Butter
  • 1 tbsp of full fat Greek Yoghurt
  • A handful of Blueberries
  • A drizzle of Honey

Method

  1. Pop your banana, almond flour, protein powder, collagen, baking powder (if using) and egg into an electric blender and whizz for a smooth consistency.
  2. Heat a frying pan until it's smoking and melt a knob of butter.
  3. Pour a ladle amount for large pancakes, or a tbsp of batter for bitesize pancakes into your pan, flipping your pancake after a minute or so. Repeat until all your batter is used. Drizzle with yoghurt, honey and a sprinkling of blueberries.
