Method

  1. Preheat the oven to 175°C
  2. Prepare the chia mixture: Combine the chia seeds with 120ml of water. Let it sit for 15 minutes to thicken and form a gel-like consistency.
  3. Combine ingredients: In a large bowl, mix the chia mixture with the almond flour, collagen, parmesan, sesame seeds, MCT oil, and a pinch of salt. Stir well until everything is fully combined.
  4. Roll out the dough: Place the mixture onto a sheet of parchment paper. To avoid sticking, place another sheet of parchment paper on top and roll it out with a rolling pin until the dough is as thin as you like (the thinner, the crispier)
  5. Cut into squares: Once rolled, use a knife or pizza cutter to slice the mixture into small squares or desired shapes (you can also just break up the cracker once baked)
  6. Place the parchment paper with the cracker dough onto a baking tray and bake for 15-20 minutes, or until golden and crispy. Keep an eye on them to prevent burning. You may want to flip the crackers half way through baking to ensure they cook evenly.
  7. Once baked, allow the crackers to cool on the tray. They will crisp up further as they cool.
