Get on your shopping list or raid your cupboard
- 1 tin butter beans, drained (a glass jar works even better)
- 1 tbsp apple cider vinegar
- Juice of ½ lemon
- 1 bulb roasted garlic
- Smoked paprika (a dash)
- Pinch of salt
- Parmesan, grated (to taste)
- Olive oil (or avocado oil)

Method
- Add to a blender: drained butter beans, apple cider vinegar, lemon juice, roasted garlic, smoked paprika, salt, parmesan, a generous drizzle of olive oil.
- Blitz until you reach a thick, hummus-like texture. Add a little more oil (or a splash of water) if needed to loosen.
- Spoon into a bowl and serve with chopped carrots for dipping.
