  • 1 tbsp apple cider vinegar
  • Juice of ½ lemon
  • 1 bulb roasted garlic
  • Smoked paprika (a dash)
  • Pinch of salt
  • Parmesan, grated (to taste)
  • Olive oil (or avocado oil)

Method

  1. Add to a blender: drained butter beans, apple cider vinegar, lemon juice, roasted garlic, smoked paprika, salt, parmesan, a generous drizzle of olive oil.
  2. Blitz until you reach a thick, hummus-like texture. Add a little more oil (or a splash of water) if needed to loosen.
  3. Spoon into a bowl and serve with chopped carrots for dipping.
