- 2 ripe Bananas
- 3 large Eggs
- 2 tbsp of Vanilla Protein Powder
- 1 tsp of Baking Powder
- 150g of Almond Flour
- 60ml of Maple Syrup (if you want it a little sweeter)
- 1 tsp of Cinnamon
- Handful of chopped Nuts (optional)
- Handful of Dark Chocolate Chips (optional)

Method
- Preheat your oven to 175 degrees celsius
- Mash the bananas in a large mixing bowl until smooth.
- Mix the wet ingredients: Add the eggs and maple syrup (if using) to the mashed bananas. Whisk everything together until well combined.
- Add in the almond flour, baking powder and cinnamon
- Slowly fold the dry mixture into the wet ingredients until fully incorporated.
- Fold in any chopped nuts and chocolate chips if desired.
- Line a loaf tin (or your could use individual muffin cases) and decant your batter
- Bake for 35-45 minutes, depending on your oven, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it loosely with foil and continue baking.
- Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
