  • 2 ripe Bananas
  • 3 large Eggs
  • 2 tbsp of Vanilla Protein Powder
  • 1 tsp of Baking Powder
  • 150g of Almond Flour
  • 60ml of Maple Syrup (if you want it a little sweeter)
  • 1 tsp of Cinnamon
  • Handful of chopped Nuts (optional)
  • Handful of Dark Chocolate Chips (optional)

Method

  1. Preheat your oven to 175 degrees celsius
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Mix the wet ingredients: Add the eggs and maple syrup (if using) to the mashed bananas. Whisk everything together until well combined.
  4. Add in the almond flour, baking powder and cinnamon
  5. Slowly fold the dry mixture into the wet ingredients until fully incorporated.
  6. Fold in any chopped nuts and chocolate chips if desired.
  7. Line a loaf tin (or your could use individual muffin cases) and decant your batter
  8. Bake for 35-45 minutes, depending on your oven, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it loosely with foil and continue baking.
  9. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
