Method

  1. In a food processor, pulse the 6 pitted dates until they break down into a sticky paste.
  2. Add the 2 tablespoons of peanut butter and 2 large scoops of chocolate protein powder.
  3. Pulse again until the mixture is well combined and forms a dough-like consistency. The mixture should not be too sticky; if it's too dry, add a small splash of water or a little more peanut butter.
  4. Roll the mixture into small, bite-sized balls, about the size of a walnut. The mixture should hold together well without being sticky.
  5. Melt the dark chocolate in a microwave or over a double boiler until smooth.
  6. Dip each protein ball into the melted chocolate, ensuring it's fully coated, then roll it in the chopped nuts for extra crunch and flavour.
  7. Sprinkle with a little Celtic Sea Salt (optional)
  8. Place the coated balls on a tray lined with parchment paper and refrigerate for about 30 minutes, or until the chocolate has hardened.
