Pesto with MCT Oil

This homemade pesto with Olive Oil and MCT Oil is full of monounsaturated fats which will satisfy those cravings the healthy way whilst supporting your brain health.
Method
Step 1
Pop your pine nuts into a dry frying pan over a medium heat. Move the nuts around until toasted.
Step 2
Add all of your ingredients into a blender and whizz until smooth.
Step 3
Serve over pasta or perhaps on a sourdough bruschetta. Yum!
Ingredients
- 2 bunches of Basil (without the stalks)
- 2 cloves of Garlic
- 150g of toasted Pine nuts
- 5 tbsp of Olive Oil
- 2 tbsp of Mct Oil
- 240g of Parmesan Cheese
- Salt and Pepper
