Chickpea Protein Cookies

High in protein, these super quick and easy chickpea cookies are a winner!
Method
Step 1
Drain and rinse your chickpeas and pop all your ingredients in an electric blender. Whizz for a smooth consistency. Stir in your chocolate chips if using.
Step 2
Preheat your oven to 180 degrees or 160 degrees for fan ovens.
Step 3
Line a baking sheet with baking paper and spoon your cookies onto your tray.
Step 4
Bake for 12-15 minutes. Allow to cool for 5 minutes on the tray and then transfer to a wire rack.
Ingredients
- 400g of Chickpeas
- 4 large scoops of WillPowders' Protein Powder (any flavour will work)
- 1 tsp of Baking Powder
- 1 large scoop of Cocoa Powder
- 80g of Dark Chocolate Chips (Optional)
- 1 tbsp of maple syrup (if you want them a little sweeter)
