- 180g Watermelon, cubed
- ½ Cucumber, sliced
- Bunch of Mint, chopped
- 1 large scoop of Olive Oil or MCT Oil
- 100g organic, grass fed Feta
- Drizzle of Balsamic glaze (optional)

Method
- Pop all of your watermelon and cucumber in a large bowl.
- Sprinkle your feta and mint over your salad.
- Drizzle with oil and balsamic glaze, if using. Season to taste.
